GK used to make fun of me for being "in love" with Philly--Eric & I go every few months--but yesterday he admitted that he is now a member of the Philadelphia fan club. I guess living in Pittsburgh makes any larger semi-clean city with good food a paradise.
In Philly we sorta cheated with the eating healthy portion of our health kick, but otherwise we've been doing great!
Fitness update:
- Tues 1/13: ~50min new Cardio DVD that was intense on the legs/but, and completely kicked my ass.
- Thurs 1/15: 30min treadmill, some abs
- Sat 1/17: ~40min treadmill/elliptical mix
- Mon 1/19: 30min treadmill, arm workout #1
- Tue 1/20: 50min Pilates
In terms of fun&interesting cooking, I tried a bok choy dish in this month's Cooking Light magazine. It was great but incredibly time-intensive for a dish that could taste just as good with much less preparation. I would modify it thus:
Ingredients:
A couple cloves of garlic cut into thin slices, 8 bok choy/shanghai choi washed thoroughly & cut in half (+ any other similar greens), ~8 dried shiitake mushrooms reconstituted & cut in strips, 2 tbsp oyster sauce + 1 tsp + 2 tbsp soy sauce + 1/2tsp brown sugar
Instructions:
Put a wee bit of oil in a wok/wok alternative. Add garlic, stir-fry for a few seconds. Add the greens + mushrooms, stir-fry until the leaves of the choy get kinda wilty. Add all the sauce, cook down. It's done when the bok choy is cooked but not soggy.

Last night we made sweet potato + black bean + corn + rice soft tacos, Eric's specialty. Basically you cook all the ingredients in three batches: sweet potatoes, black bean + corn with cheese, and rice with spicy peppers. Spice according to taste, grill up some tortillas, and voila.

I've been working out, too! 3 times a week for now. Possibly increasing it to 4 when winter stops being so difficult.
I'm curious as to what the cardio DVD is that kicked your ass. Also, I have big news, but maybe I will write it in an e-mail.
